Baked chicken breast over couscous

YUM. Easy.


1 cup water, pinch o’ salt, 1 cup couscous – heat water and salt until boiling, turn off heat/set aside, add couscous, cover and let sit for 5-10 minutes

cherry/grape tomatoes, 1 cucumber, bit o’ olive oil, couple cloves of garlic – chop up tomatoes and cucumbers, sautee garlic

chicken breast, salt, pepper, rosemary/sage/whatever ya got – preheat oven 350-degrees, flip seasoned chicken at some point

fluff couscous with a fork, mix in fresh veggies and garlic, top with chicken
