This was a fabulously hearty chili, but needs a bit of time (half-hour) to simmer its way to goodness.
Start with a cup of water, and half a cup of quinoa, and let it boil! (Add some veg or chicken stock if you want, too, for more flavor.)
Then once it does, add your can of chopped/diced tomatoes and bean of choice (I chose a can of pinto beans)
and add however much cumin and ground pepper and chili pepper and spices in there…
And maybe lower the heat to simmering until its thick and delicious!
