Chow mein


Hi! This is Aimee. It’s been a while.

Yesterday my friend came over and made really really amazing chow mein. We used linguine because we didn’t have rice noodles, but it worked out great. We started off cooking the noodles 3/4 of the way (aka 3/4 of the time on the box) with some salt and oil. Then my friend heated some oil on a pan with lots of garlic, onions, and green onion. Meanwhile, he boiled some corn and carrots (I’d add peas too if you like peas). Then, he tossed the noodles and vegetables into the pot after the onion has been carmelized and the garlic has been browned. Finally, he threw in some eggs and spinach. The trick to the eggs is to not mix the yolk and the white until the egg has been cooking for a while. To season, we used soy sauce and red pepper.

And to top everything off, we ate on the balcony. It was a beautiful sunny day and we got to enjoy the noodles with a gorgeous view of the shimmering city. San Francisco, it’s been real.
